WHAT ARE WE COOKING?! Â COME JOIN US:Â
* Roasted asparagus salad with tangerine dressing*
*Sauteed shrimp w/ carrot couscous and fresh chives*
To prepare, you will need:
1 large saute pan, 1 med. saucepan with lid
Ingredients:
1 lb. Asparagus
(nutritional flakes optional)
1/2 cup tangerine or OJ (freshly squeezed) (save rind)
1 tbsp. rice wine vinegar
1 tsp. lemon juice
1 clove garlic, minced
2 tsp. grated fresh ginger
4 tbsp. chopped chives
1 1/2 cups carrot juice
1 cup uncooked couscous
1 1/2 pounds wild med. shrimp, deveined tail on or peeled (defrosted)
3/4 tsp. each paprika, garlic powder, onion powder, cumin.
Fresh parsley or cilantro for garnish.
