Our March menu with be: Wild Salmon with “Green Sauce”, Balsamic-Braised Collard (or Kale) Greens , Mango-Raspberry Frozen YogurtIf you are cooking alongside us, here are the ingredients you will need:
2-4 Fillets of Wild Salmon (1 for each person)(you can use Tofu if you prefer)
2 bunches collard greens (or Kale)
1 large clove garlic, minced, pinch red pepper flakes (optional)
1/4-1/2 cup of water, as needed
2 Tbs. Cider vinegar or balsamic vinegar
For Green Sauce:
1 bunch of cilantro, basil or parsley
2 Tbsp. tahini
1 Tbsp. lemon juice
1Tbs. olive oil
1 small clove garlic
sea salt
Mango-Raspberry Frozen Yogurt
1 cup Frozen Mango
1 cup Frozen Raspberries
1 cup whole milk Yogurt
1/4 cup maple syrup
10 basil leaves
1” piece of ginger, minced or grated
